and Onion Gravy
This is so
easy and quick to make and requires very few ingredients. It tastes hot
and spicy as tomatoes take in the heat of the chillies very well. Even
though the following recipe calls for certain ingredients available only
in the Indian grocery stores it can be made even without them and it tastes
just as good.

How to prepare:
Tomatoes any kind
5 to 6 thinly sliced lengthwise
Onion 1 big one
thinly sliced lengthwise
Salt 2 teaspoons
or to taste
powder or red chilli powder 1 teaspoon
2 to 3 thinly sliced
powder 1 teaspoon (its an all spice blend)
a pinch ( for color)
Heat oil in a
Add the onions
and green chillies and fry till transparent or sweaty.
Add the tomatoes,
Cayenne pepper powder, masala powder and the turmeric.
Fry once and keep
covered and cook till the tomato is cooked and the onions and the tomato
Now add the salt
and cook a little bit more.
A little water
can be added now and then during the cooking process so that the gravy
does not stick to the pan and comes together nicely.
This dish goes
very well with tortillas and plain white rice (basmati or regular). It
serves as a good side dish.
